Can You Eat Sprouted Garlic?

Yes, sprouted garlic is perfectly safe to eat.
Asharvested garlicmatures, it can begin to develop green sprouts in the center of the bulb.
These might stay hidden under the layers of papery skin at first.
In time, these light green stalks will protrude through the skin and continue to grow.
The cloves just might taste slightly more bitter at this stage.
Its not the sprouts themselves that are the source of that bitterness, though.
The bitter quality comes from the clove, which at this point, is getting up there in age.

Finding a climate sweet spot is key.
In most homes, a pantry or dark cupboard works great.
In these conditions, whole garlic bulbs can last for up to 6 months.
Storepeeled garliccloves in an airtight container or zip-top bag in the refrigerator for up to 1 week.
