Add chicken pieces to bag, a few at a time, shaking to coat.

In a 6-quart Dutch oven heat olive oil over medium-high.

Add half of the chicken; cook 8 minutes, turning chicken to brown evenly.

Remove chicken from Dutch oven; repeat with remaining chicken.

Add Vegetables

Add mushrooms, carrots, and shallots to pot.

Cook and stir 4 minutes.

Add garlic; cook and stir 1 minute.

Cook, uncovered, 3 minutes or until most of the liquid is evaporated, stirring occasionally.

Add chicken broth; bring to boiling.

Simmer

Add chicken, potatoes, and bouquet garni to pot.

Return mixture to boiling; reduce heat.

Cover and simmer 45 minutes or until chicken is tender.

Spoon cooking juices over chicken and potatoes once or twice during cooking.

Transfer chicken and vegetables to a serving platter.
