Set aside 1 teaspoon of the seasoning blend for the vegetables in step 4.

Cook Chicken

Heat 1 tablespoon of the oil in a large, oven-going skillet over medium-high.

Remove the chicken from the pan and set aside.

Add Vegetables

Heat the remaining tablespoon oil in the skillet over medium.

Add the peppers and onion, cook 5 to 7 minutes or until tender.

Stir in the garlic; cook 30 seconds more.

Stir in the corn, black beans, tomatoes, lime juice, and reserved 1 teaspoon seasoning blend.

Return chicken breasts back to the skillet and arrange in an even layer over the vegetables.

Top with chopped cilantro and serve with cooked rice.
