Start infusing the cream the day before you bake the Earl Grey cake for a delicately perfumed filling.
Make the Earl Grey Syrup
In a small saucepan, bring 1 cup of water to boiling.
Add the remaining 2 tablespoons of tea leaves and steep for 5 minutes.
Strain and return the tea to the saucepan.
Return the mixture to boiling, then add the granulated sugar, stirring to dissolve.
Continue boiling the mixture for 5 minutes or until it’s slightly thickened and syrupy.
Remove the saucepan from the heat.
Bake the Cake
Meanwhile, grease and flour two 9-inch round cake pans.
Prepare the cake mix according to the package directions.
Spread the cake batter in the prepared pans and bake as directed.
Prepare the Toppings
Strain the infused cream into a chilled bowl.
In a medium bowl, toss the raspberries with the remaining tea syrup.
