Ingredients

1 (2 1/2- to 3-lb.

Trim fat from meat.

Sprinkle roast with salt and pepper.

Dutch oven, heat oil over medium-high heat.

Add roast and brown on all sides, 4 to 5 minutes per side.

Remove roast from the Dutch oven.

Cook Onions

Add onions to the Dutch oven.

Cook and stir 1 minute or until fragrant.

Add Ingredients

Return roast to the Dutch oven.

Add broth, Worcestershire sauce, vinegar, thyme, and bay leaf.

Bring to a boil.

Roast

Cover pot and roast 2 1/2 to 3 hours or until meat is tender.

Remove Onions

Discard bay leaf.

Using a slotted spoon, transfer meat and onions to a serving platter; keep warm.

Finish and Serve

Skim fat from cooking liquid.

Return to Dutch oven.

In a small bowl combine cornstarch and water until smooth, Stir into juices in the Dutch oven.

Cook and stir over medium heat until thickened and bubbly.

Cook and stir 1 minute more.

Serve with meat and onions.

How to Make Slow Cooker French Onion Pot Roast

Prepare as directed through step 2.

Place onion mixture in the bottom of a 5- to 6-qt.

Add broth, Worcestershire sauce, vinegar, thyme, and bay leaf.

Cover and cook on low 10 to 11 hours or on high 5 to 5 1/2 hours.

Using a slotted spoon, transfer meat and onions to a platter.

Skim fat from cooking liquid.

Measure 2 cups of cooking liquid, adding beef broth as needed to reach 2 cups.

In a small bowl combine cornstarch and water until smooth, stir into cooking liquid.

Add to a small saucepan.

Cook and stir over medium heat until thickened and bubbly.

Season with additional salt to taste.

Serve with meat and onions.
