Place popcorn and nuts, if using, in a roasting pan.

Keep warm in a 300F oven.

Make Caramel

For caramel mixture, butter the sides of a heavy medium saucepan.

In the saucepan combine sugar, butter, and corn syrup.

Cook and stir over medium-high heat until mixture boils.

Continue Cooking

Clip a candy thermometer to the side of the pan.

Reduce heat to medium.

Pour Caramel

Immediately remove saucepan from heat; stir in vanilla.

Finish

Spread popcorn mixture on a large sheet of buttered foil to cool.
