Kaelah chose Miss Vickie’s brand chips and a flavored balsamic glaze for her batch.

She prefers the flavor of Gorgonzola cheese but mentions you might also use feta or goat cheese instead.

“Chippy Boys” are the perfect blend of salty chips, sweet glaze, and funky blue cheese.

The almost-burnt potato chip edges might have been my favorite bites.

But every combination of chips, cheese, and glaze I tried was good.

Just be sure to choose a sturdy chip.

I wouldn’t swap in regular potato chips here.

No more wrestling to get the paper to fit perfectly.

Next, layer on your kettle-cooked potato chips.

The thicker the chips, the better.

I absolutely love blue cheese, so I went a little heavy with it.

This is not the time to walk away.

The chips can burn very quickly, as I found out the first time I made them.

I still ate the slightly burned batch, and it was still delicious.

Step 4: Glaze

Right out of the oven, drizzle the chips withbalsamic glaze.

you might use flavored glazes, like raspberry balsamic or fig balsamic, or plain.

I had a bottle of plain glaze in my fridge, so that’s what I went with.

I recommend going heavy on the glaze.

It helps balance all the saltiness of the chips.

Kaelah recommends tossing the chips in a bowl to evenly coat them with glaze.

I skipped that step in favor of eating them right from the pan.

I love this recipe so much.

It’s the perfect snack to enjoy with aglass of white wineand a small bowl of olives.
