Rather than using butter or oil, this cake relies onheavy whipping creamfor a light texture and rich flavor.
Do not substitute whipping cream or half-and-half; these don’t have enough milk fat.
The result is a light, tender cake with plenty of vanilla flavor.
We like to serve this whipped cream cake recipe with fresh berries andsweetened whipped cream.
It’s also delicious with a drizzle of chocolate sauce or caramel.

Grease and flour a 10-inch fluted tube pan; set aside.
Mix Dry Ingredients
In a medium bowl sift together flour, baking powder, and salt.

Replace the 2 cups all-purpose flour with 2 1/4 cups cake flour.
In a small bowl whisk together eggs, egg whites, vanilla, and almond extract.
Gradually beat in sugar.
Continue beating on medium-high speed until thickened, 1 to 2 minutes.
Test Kitchen Tip:To make superfine sugar, process 1 cup plus 2 Tbsp.
granulated sugar in a food processor 30 seconds.
Make Batter
Gently fold half of the flour mixture into the cream mixture.
Add remaining flour mixture and gently fold until fully incorporated.
Transfer batter to prepared pan, spreading evenly.
The batter will be shallow in the pan, but will rise as it bakes.
Cool in pan on a wire rack 15 minutes.
Turn cake out onto wire rack and cool completely.
If desired, serve dusted with powdered sugar.
For the best flavor, wrap the cake with plastic wrap before storing.
