Line a 15x10x1-inch baking pan with parchment paper; set aside.
In a plastic bag combine panko, cheese, oregano, garlic powder, and pepper.
In a small bowl combine egg and milk.
Add 1 cup of the vegetables to the egg mixture; toss to coat.
Using a slotted spoon, transfer vegetables to the panko mixture in the bag; shake to coat.
Place vegetables in the prepared baking pan.
Repeat with the remaining vegetables.
Drizzle with melted butter.
Bake for 20 to 25 minutes or until vegetables are tender and the coating is golden, stirring twice.
If desired, serve vegetables with Easy Aioli.
