What Is Swamp Soup?
The history of swamp soup is a bit unclear, but we know the recipe originated in the South.
Swamp soup is made with greens,smoked sausage, pasta, and beans.

The basic swamp soup recipe is easy to customize with whatever you have on hand.
No matter what you use, the finished soup is brothy yet full of hearty flavor.
I prefer mine with a drizzle of olive oil and a sprinkle ofParmesan cheese.

Ingredients
4cupswater
1lb.fresh turnip greens, stemmed, washed, and chopped or1(14.5-oz.
)cartonreduced-sodium chicken broth
1(15-oz.
)canGreat Northernornavy beans, rinsed and drained
1(1.4-oz.)

Dutch oven or 3 qt.
saucepan bring water to boiling.
Add fresh turnip greens, reduce heat and simmer, covered, 20 minutes or until tender; drain.

Add Sausage
In the Dutch oven, heat oil over medium-high heat.
Add sausage and cook 5 minutes or until browned, stirring occasionally.
Reduce heat to medium; add onion and garlic.
Cook 4 minutes or until tender.
Reduce heat and simmer 15 minutes to combine flavors.
Finish and Serve
If desired, add cooked ditalini to each serving bowl.
