Tartiflette is a comforting French dish rooted in the Alpine region of Savoie.
Its name comes from the local Savoyard wordtartifla, which translates to potato.

Directions
Cook Potatoes
Preheat oven to 400F.
oval or rectangular baking dish.
In a large saucepan combine potatoes and enough salted water to cover.
Bring to boiling and cook, covered, until just tender, 25 to 30 minutes; drain.
Rinse with cold water; drain again.
If desired, peel potatoes.
Cut potatoes crosswise into 1/4-inch slices.
Sprinkle with salt and pepper.
Place half of the potatoes in bottom of prepared baking dish.
Cook Bacon
Meanwhile, in a 10-inch skillet cook bacon over medium until crisp.
Drain bacon on paper towels.
Add onion to skillet.
Cook and stir over medium until tender, about 5 minutes.
Add garlic and cook and stir 1 minute more.
Carefully add wine to skillet.
Simmer, uncovered, until wine is nearly evaporated.
Assemble
Spoon onion mixture over potatoes in dish and sprinkle with bacon.
Top with remaining potatoes.
Pour cream over potato mixture.
Cut rounds in half horizontally.
Arrange cheese, rind sides up, on top of potato mixture.
Before serving, sprinkle with additional fresh thyme.
