Canadian poutine is traditionally made with fries, fresh cheese curds, and brown gravy.
It’s a classic comfort food recipe that’s an addictive blend of crunchy fries and squeaky cheese curds.

It’s best eaten right away while the fries are crisp and the gravy is warm.
If you’d prefer, you might makehomemade friesand gravy instead.
Spread the fries in a shallow baking pan.

Bake until browned and crisp, 25 to 30 minutes.
Meanwhile, warm the gravy until hot.
Place the fries in a large bowl.

Add 1/2 cup of hot gravy to the bowl and toss to completely coat fries.
Add the cheese curds and toss with the hot fries and gravy.
Transfer to a serving dish.
Sprinkle with parsley and freshly ground pepper.
Serve immediately with remaining gravy.
