Ingredients

Nonstickcooking spray

3Tbsp.fresh lemon juice

2Tbsp.olive oil

1Tbsp.

salt-freecajun seasoning

1tsp.dried Italian seasoning

1/2tsp.paprika

1/4tsp.crushed red pepper

8oz.

Line a 1510-inch baking pan with foil.

Coat foil with cooking spray.

Place potatoes, corn, and onion in prepared pan.

Drizzle with one-third of the lemon mixture; toss to coat.

Roast until starting to brown and soften, 20 minutes.

Roast 4 minutes more.

Place shrimp in pan with potato mixture.

Roast until shrimp turn opaque and vegetables are browned and tender, 8 to 10minutes more.
