Put that leftover Thanksgiving turkey to good use!
The whole dish is topped off with melty cheese, green onions, and eggs.
It makes a great brunch dish,egg recipe for breakfast, or quick dinner.

Recipe for Turkey Hash
The best thing about turkey hash is how easy it is to customize.
Serve those on top instead.
Have leftover green, orange, yellow, or red peppers from your vegetable plate?
Chop them up and toss them in.
Here are the basic ingredients you’ll need.
Start by cooking the chopped potatoes in olive oil until they’re brown and tender.
Next, add your chopped turkey, veggies, and seasonings.
Stir this often to keep things from burning.
It’ll take about 5 minutes for the peppers and onions to soften.
Top the cooked turkey hash with shredded sharp cheddar cheese, sliced green onions, andcooked eggs.
It’s goes right from skillet to table with no need for another dish.
cooked ground turkey, seasoned with 1/2 tsp salt and 1/2 tsp pepper.
oil in large cast iron or nonstick skillet over medium-high heat.
Cook potatoes until browned and tender, about 15 to 20 minutes.
(Turn heat to medium if browning too quickly and add remaining 1 Tbsp.
oil if needed.)
Cook until vegetables are softened, 5 more minutes.
Sprinkle with cheddar cheese and let stand, covered, 2 minutes or until cheese is melted.
Top with green onions and cooked eggs.
